    A family friend from New Orleans learned how to make this over 30 years ago and has been making it ever since. When I found out how simple the recipe was, I wrote it down immediately to add to my collection.

    I took recipe #20289 from Mysterygirl and tweaked it to lower the sugar and fat. I also converted most of the flour to whole wheat. The results were outstanding.

    This is a tried and true recipe I borrowed from a relative. It is always a crowd favorite at parties. I don't think I've ever seen someone only take one bite. I use part-skim shredded cheeses to keep the fat low. No one can tell the difference. I usually put the pepper jelly on about 3/4 of the top in case some of my guests prefer a milder version. The red pepper flakes are also optional. It takes great with or without them.

    This is an adaptation of Baked Pancakes #149110. I just can't make plain pancakes! When I first pulled the pan out of the oven I was afraid they would be dry. They were not. These came out better than any pancakes I've cooked the traditional way. Very high, fluffy and moist. I try to cook with as little added fat as possible. I'm sure this recipe would turn out fine with a whole egg instead of Eggbeaters. I keep wheat germ and flax seed in my fridge all the time. If you don't have them on hand, you can omit them.

    I never serve plain oatmeal. I keep adding ingredients to boost the nutrition. I don't like sweet oatmeal, so there is no sweetener in this recipe. Feel free to add sugar or agave nectar to your taste. You can't mess this recipe up. You can add sliced/diced fruit on top after it is cooked, or cook it with the oatmeal. Sometimes I add a couple of tablespoons of finely chopped nuts and various dried fruits as well. Kids love this and it is very filling.

    These are muffins from a health spa in California. There is NO added sugar. The sole purpose of these muffins is to increase your fiber intake without adding lots of calories to your diet. If you want a sweet/dessert snack, keep looking. These are very plain.

    The original idea for this recipe came from the Bisquick website. I have made significant changes to it to adapt it to my healthy lifestyle. This recipe freezes extremely well, hence the large quantity. It's great to make on a Sunday morning, and pull out of the freezer for a quick breakfast treat during the week.
