    This is a recipe I've been making for over a decade (Ahhh!). I used to make it for my mom when I was growing up. The eggplant is crispy, and salty, while the homemade sauce is a little sweet, and has lots of basil and garlic. Yumm.

    Delicious, light, yummy. I use King Soba's Organic Black Rice Soba Noodles, and Auntie Chun's Roasted Seaweed Snacks in Wasabi for the dried nori seaweed topping... it's a little spicy, but is great paired with the sweetness of the rice vinegar/peanut dressing as well as the vegetables and cilantro.

    So, I got home from the gym one day and thought, I want to eat something healthy. Red quinoa ? Check. Then I thought, I want it to taste really good. Avocado, red onion, cherry tomato, olive oil? Check. I added a little bit of balsamic vinegar to the quinoa and then mixed it in with the guacamole, and the combination turned into this texture-rich, super flavorful, smooth paste that was so delicious I didn't want it to end. I thought, man, this would be great in a wrap! So I added in some lean white chicken breast and low carbohydrate wraps, and was hooked.

    One of the most delicious meals I've ever made. Literally 3 ingredients, if you don't count a side salad, which I usually make with arugula, cherry tomatoes, lemon, olive oil and a bit of salt. Important to use Soy Vey Veri Veri Teriyaki Marinade... is the crux of the dish.
