The following recipe will serve two adults with hearty appetites or four small eaters. You might finish the plate with a fresh green vegetable in season, such as asparagus spears or broccoli florets. One quick dip and they melt in your mouth. They are such a favorite in our home that I make them all year round, because they have the added advantage of being low-fat. Enjoy, and next time we'll progress to a full fat delight.
