    I've had this recipe for many years and I used to make it on a regular basis when I was a newly-wed and made it often for the kids when they were itty bitty. It is a great recipe and one well worth making from scratch. Due to a crazy work and life schedule, I weened off of making it but I'm placing it back on my repertoire. I originally got this recipe from an old foodnetwork show called "Chef DuJour" where a different chef was featured daily. This particular day, Lauren Groveman was the chef who presented this recipe.

    One of Wolfgang's Puck's recipes made with Alaskan King Salmon filets. Wild Salmon is best to use. If you live in the Pacific, Alaskan salmon would be affordable, but if you live on the Atlantic side of the country, Atlantic salmon would be more affordable (though wild is harder to find). Either way, using wild over farm-raised is preferred due to the superior taste.

    This is a favorite of ours, especially for breakfast. It's great toasted with a smooth splatter of butter over it. My husband and I originally had it at "The Ellis River House" in Jackson, N.H about 18 years ago. Lucky for us when we stayed there, they were selling a small cookbook which contained recipe's from the local country inns. My kids now love it too and it makes the house smell great. I always make 2 breads because 1 is just not enough. Who is Barry? He was the Inn's owner and chef who served this lovely bread every morning for breakfast with his wonderful mushroom omelet's.     Tried and true. I used to make this all the time and recently I realized I hadn't made it in a while, so I decided to make it. My daughter ooo'd and aww'd and asked what was wrong with me because I hadn't made it in so long. She claimed it was her favorite dish I've made. It is essential to shred the meat as the liquid will absorb into the crevices of the shreds, otherwise leaving it in chunks will be more runny. To save time, I've normally completed the cooking of the meat the day before and I finish it off the next day. Voila, it's done. I think I found this recipe in Good Housekeeping magazine, but I can't quite recall. I have changed it through the years, adding my own tweaks.

    Nothing says comfort like a good chicken casserole. Perfect for using left-over chicken or turkey! Hey ladies & gents, use it when you don't know what to do with all the leftover Thanksgiving turkey. I normally cut up the chicken and mix the sauce ingredients the night before. Next day - all there is to do is put everything together, stick it in the oven and voila, dinner is ready in no time for those rushed weekday nights! Note that this serves 10ish, therefore you may want to halve it depending on size of family.
