    This soup is a great way to kick off fall. It is good hot, but even better served chilled. We always have this on the first day of fall, Halloween (before trick or treating,) and on Thanksgiving before the "big" meal. There are lots of things you can substitute with if they aren't on hand

    Keep in mind this is a diet recipe. I combined several other recipes and modified to fit my dietary needs. It is a healthy way to curb that nagging sweet tooth. Replace the toasted almonds for any other type of nut (yummy with pumpkin and flax seeds too) and add dried fruit to your hearts content. A bit of added salt might add some more flavor too (I am watching my sodium.)

    I was making a kid's rich, chocolate birthday cake and tried some experimenting. This turned out FABULOUS and hardens like a royal icing. The color is a light latté color and can be tinted most darker shades. This recipe requires POWDERED/CONFECTIONARY sugar! If you have a granular mess or weird texture it is because you used granular sugar.

    You will love this recipe. It is time consuming with lots of ingredients, but the end result is fabulous. I make large batches of it, wrap tightly and store in my pantry (don't refrigerate.) It took me hundreds of batches to get the consistency just right so follow the recipe exactly. My favorite is to flavor with orange or lemon extract. The taste is really good.
