    This is a great way to prepare those delightful fiddlehead ferns that are picked in the spring. If you prefer your fiddleheads softer, boil them for a longer time. The time listed in the recipe leaves the fiddleheads crunchy. Very yummy!!!

    Haven't tried this recipe yet but it sounds very interesting and yummy. A must for any mozzarella fan. The mozzarella is actually boiled and formed into a roll. Mmmm..I can only imagine all of the possible filling variations.Serving size is one mozzarella roll that is cut into slices.

    This is a recipe for New Brunswick Acadian Poutines Rapees. This is not a recipe for fried with curds and gravy. Poutines rapees are a mixture of raw grated potatoes, combined with cooked and mashed potatoes, which are then formed into a ball, stuffed with seasoned salted pork and simmered in salt water. I am fortunate enough to live in NB, but you still don't see these around that often. I don't know why because they are so yummy. Another fine example of Canadian cooking!

    This is a nice change from regular poutine in that it uses marinara sauce in place of the beef gravy. Not sure if it could ever beat the original, but I like it for a variation once and awhile. Be sure to use real cheese curds or it is just not a poutine. If you ever have the opporuntity to go to Quebec, stop at one of the casse croutes along the highway and order a real, French-Canadian potine. You will NOT be disappointed!

The chocolate bars can usually be found at your local supermarket on the candy aisle, or at gourmet candy stores. Toblerone is available in both milk and dark chocolate bars.
