For my birthday, my daughter wanted shrimp with a creamy pasta. Unfortunately, we have dairy allergies in the family, so I came up with this DELICIOUS recipe. Added bonus: It has very little fat and is VERY easy to make!

    Recipe #500874

I came up with this recipe when I had a mess of panfish (bluegill) but didn't want to deep fry them. They turned out moist, and full of great flavor--no need for tartar sauce!

    Recipe #498053

The first time I successfully raised Leeks in my garden, I wondered what to do. I came across a recipe for braised leeks, but added a special touch by caramelizing them. They are SOOOOO yummy and easy to make!

    Recipe #477309

This fabulous recipe has so many options! I like to add a splash of almond extract and serve the vanilla pudding with cherries or strawberries. YUM! You can make this with diary if you like, but you won't know it's dairy-free if you choose to make it that way. When we discovered a family member had milk allergies, good desserts were hard to make. This easy recipe gives you so many delicious options! Feel free to experiment with more. It also works great for pie filling!

    Recipe #476125

This delicious recipe is from my sister, Julie. It's easy to make once you've got the vegetables chopped! Feel free to get creative with ingredients! Green lentils are fine, but be sure to soak them for at least an hour and cook them for about 30 minutes. Typically, I make this from leftover chicken that I throw in the pot when I add the stock and lentils. To make your own stock, Boil the chicken bones with onion and celery. I chill it and remove the fat and bones to make a good low-fat stock. Be SURE you save the leftover coconut milk to make my delicious Double Coconut Meringue pie!

    Recipe #471930

This is an extremely easy Dutch recipe that the whole family loves for a weeknight meal. It's another recipe where you can get creative and add more ingredients to your family's taste and you can also make it dairy-free for those with milk allergies. If you want this rich and creamy, add butter and cream when mashing the potato and carrot mixture. If you want it light (or dairy free) just use some of the hot water from boiling the vegetables or use dairy-free "milk" and Fleischmann's unsalted margarine. NOTE: all measurements are approximate! Have fun and treat the family to colorful mashed potatoes--Perfect for Halloween or any night!

    Recipe #466504

We love sun-dried tomatoes in lots of things, but they're expensive! And when the garden gave me an abundance of cherry tomatoes, I thought I'd try drying them. They're delicious! This will work with larger tomatoes (Roma are wonderful) as well as grape and cherry tomatoes. Just let dry longer!

    Recipe #466207

I LOVE an easy, nutritious dessert that I can easily modify so my husband, who is allergic to all milk products, can eat! This one is fantastic!

    Recipe #463183

Delicious and easy! If you use Fleichmann's Unsalted Margarine, it's also dairy-free.(Check your label to be sure!) Of course, those of us who can handle dairy can use real butter and top with a big scoop of vanilla ice cream. SO yummy!

    Recipe #463028

This is our family's FAVORITE pumpkin pie! No need to buy evaporated milk for this delicious recipe! Using skim milk keeps the calories low, but feel free to use whatever you have on hand. My husband has to eat dairy-free, so I use coconut milk beverage or almond milk. You can also substitute pumpkin pie spice if you don't have the individual spices on hand.

    Recipe #462399

This is an incredibly easy and delicious pie to make when blueberries are in season! I've included stove-top instructions, but the microwave makes it SO fast and easy.

    Recipe #462397

These muffins are both fantastic and easy...Thus the name! They are also easy to make dairy-free (DF)by substituting a non-dairy milk (soy, coconut, almond). I got the recipe from my mother-in-law, Marian Johnson.

    Recipe #461607

This is the best, freshest-tasting guacamole I've ever had! Using great avocados, SWEET onion and lemon juice makes really delicious guacamole that even people who don't like avacados will LOVE! I got the recipe from My friend Teri, who is a fantastic cook.

    Recipe #450329

Rich chocolaty flavor with a hint of coffee, this ice cream, though milk-free, is smooth and creamy. Feel free to substitute the chocolate almond or coconut milk for vanilla to make vanilla ice cream and use amaretto instead of the coffee liqueur. If you use unsweetened almond or coconut milk, add a bit more sugar.

    Recipe #450308

This cake tastes so decadent. The topping is sweet and crunchy and tops the moist apple cake perfectly! I have great memories of coming home from school and smelling this cake coming out of the oven. YUM!

    Recipe #448352

This delicious soup is easy to make, even if you're on a budget! The flavor is rich and OH so yummy! I got the recipe from my sister, Lynn, who got it from our Beppe (Freisian for Grandma).

    Recipe #448348

This is a traditional two-crust pie, but fits in about twice the apples of a regular pie. SO delicious with a scoop of vanilla ice cream!

    Recipe #446227

These are a Dutch New Year's tradition (but you can make them any time if you like deep fried apple and raisin yeast doughnut balls).

    Recipe #445576

Most fudge recipes call for marshmallow creme, but I never keep it on hand. This one calls for marshmallows and chocolate chips. It's easy to make and always turns out great and it's an easy recipe to double with no more effort! The nuts are optional. I'm allergic, so I skip them.

    Recipe #444300

The basic scone recipe was given to me by my Aunt Geri, who makes the orange cranberry scones. I wanted more variety, however, and have come up with many combinations. Feel free to get creative and make your own!
