This bundt cake comes out beautifully. The large flake coconut gives it texture with the pineapple and can be served as is or dusted with confectionery sugar on top. I almost want to top it with little drink umbrellas!
This cake is very moist and rich. It looks beautiful with slivered almonds around the top of the Ganache. (I make it for fancy birthdays and fill layers with cappachino mousse.) I have seen some recipes with sour cream in the batter, but I like vanilla yogurt better.
I was wanting Indian food so I started some Naan Bread, Recipe #203261, and it was ready to put on my stoneware to bake. This recipe is one that I made up quickly in an attempt to duplicate a dish we had at a local Indian restaurant...The kids and hubby loved it, so I hope you will enjoy it too!
Grammie would make this all summer and it is so simple to put together to bring to pot lucks or picnics. I love that you can all all kinds of summer veggies from the garden. Inexpensive yet very tasty, I hope you enjoy it as much as we do...
