Stuffing chicken breasts with a tangy cheese mixture is a great way to add flavor. And it couldn't be easier: simply mix together a few ingredients, slit the chicken breasts, push the filling in with your fingers, and saute. To meet the challenge of keeping chicken breast moist, this recipe uses a technique called pan-steaming. After browning one side of the chicken breasts, I turn them over and rest a pot lid that fits inside the frying pan right on top of the chicken. The lid prevents the steam from evaporating completely, keeping the chicken moist, yet because I'm not covering the entire pan, the chicken continues to brown rather than steam. The chicken can be served either with a reduced pan sauce or a ROASTED CHILE-CILANTRO SAUCE. This recipe is fun to play with. Try sun-dried tomatoes added to (or in place of) the olives. In the summer, flavor the goat cheese with fresh herbs such as basil, chives, and mint.

One day with a craving I was surprized that there was only one recipe on the zaar site for tomato soup. This is a very simple recipe that is both healthy and tasty.

This is a low fat version of a high fat classic. When selecting your eggplant for this recipe, chose long eggplants to accomodate the rolling. Simple & delicious. Also, for those of you who enjoy OMAC, this recipe can be added to your list. It was inspired by a recipe I wrote down from a PBS cooking show, that I altered a bit.

This recipe is a nice accompaniment to a roast or poultry, or a simple vegetarian first course. For a lighter version, nonfat sour cream can be used with good results, still being creamy and satisfying. It was adapted from a recipe I clipped from a womens magazine years ago.

Something different than the typical spaghetti with red sauce. This dish bursts with flavor, and is simple to put together. I do omit the salt when I make this and have also used linguine which I actually like better. Delicious with a simple mixed green salad and good crusty bread. Recipe courtesy of Giada De Laurentiis.

For a special meal your guests will think they are in a five star restaurant when they first see and then taste this entree. This elegant recipe looks like a lot of work, but the fillings can be made the night before and the dish assembled the next day, just remember to bring the fillings to room temperature to aid in spreading. Cooking time does not include marinating time.

Posted by request. Although habanero peppers are extremely hot, they do not overwelm you in this recipe, but rather lend a nice heat once your meat is marinated. Do be careful however when handling and chopping these peppers. Cooking time is marinating time.
