I haven't tried the recipe yet, but it looks good! I found it on the side of a Triscuit box. It suggests to serve it with the Parmesan Garlic flavor crackers.

My MIL makes this all of the time. I think she found the recipe online - you can play around with the flavor a bit as it has instant potato - try cheddar, sour cream & chive, butter - the recipe calls for origional. When I'm in a pinch, I steam my potatoes - it goes even faster.

    Recipe #252203

Here is a VERY easy recipe to start out with. You can use any combination of cheeses & veggies (or meats). I've experimented with many. Just make sure to sweat out your veggies a little so they don't water down your eggs. I make mine with NO crust to save on calories & everything stays the same. The best combination I've made is Bavarian ham & salami for the meat, 3/4 cup of fontina cheese in the quiche and 1/4 cup of parmesan on top. Then, I sprinkle tastefully simple (garlic garlic, about a TBSP) on top. MMM!

Bananas substitute for most of the eggs, applesauce for the oil. These are a little more dense and springy, but easier on the calories and have great flavor! I use the Recipe #44126 and top with toasted coconut - YUMMY!

This dish is so versatile--you can serve with potatoes & veggies, alfredo, or on buns for lunch. Add a little lemon to make it springy!
