    Cobia is a wonderful, firm white fish with incredibly thick, flaky steaks. You would also use halibut or red snapper. The pesto is made with sweet and thai basils, but you could use all sweet basil equally well I think. The thai basil gives it a bit of an anise/liquorice flavor. You can choose to omit the parm as lots of people don't do fish and cheese together...ever.

    I found this on BHG and didn't see it posted here yet. It is a really wonderful and easy white wine cream sauce for pasta or breaded chicken cutlets. SO so tasty! I added some chopped mushrooms before adding the flour and left out the cheese by mistake and it was wonderful!

    I recently had spanikopita at a local restaurant that had light and fluffy rice in it! It was amazing, so I decided to try to recreate it at home. I had some leftover rice/spinach/feta mixture, so I made it into balls, coated it with panko, and fried it into arancini. I thought it quite tasty, so thought I'd share.
