    I'm pretty much on a low-carb for life diet and have been for several years so I'm always looking for new recipes and new ideas for something tasty AND that fits within my personal dietary guidlines. This recipe turned out really good and has unlimited options (i.e. beef sausage, hot dogs, chopped ham, chopped up spam or throw in your favorite veggie..) so feel free to get creative with it!!

    Born, raised & still residing in Lancaster County Amish/PA Dutch Country this is as authentic as it gets. This recipe is from the Mennonite Community Cookbook that's older than me & given to me by my mother. I saw a few other versions posted, but none were like this one. You could use 9 inch pre-pared pie crust but for the real deal you may want to start from scratch (see my recipe #163245 for the crust that goes with).

    Another "comfort food" passed down from Mom. This was actually my favorite meal growing up and is sure to win over spinach lover's & 'not so' spinach lovers alike as you don't taste the spinach very much. Serve over toast. (Note: this is not the traditional creamed spinach you find in restaurants. It is very thick & creamy and is served as a meal, not a side dish.)

    This is a long-time favorite recipe of our Lancaster County, PA family passed down from my mom. She gets requests for it all the time and has to make double or triple this amount now whenever she makes it so everyone has some to take along home too. For me, it's a true comfort food if there ever was one! We always serve it over toast and/or homefried potatoes. My dad refer's to it as S.O.S. from his days in the service. (Recipe makes about 4 servings for our hungry family but it freezes very well so any leftovers won't go to waste.)

    This is yet another one of my favorite recipe passed onto me by generations and generations of great bakers before me. Very moist and delish!! Probably enhanced by the fresh zucchini picked from my grandpa's garden but I'm sure store bought zucchini will do just fine too.

    This is the best pumpkin roll I've ever tasted. Everyone who tastes it always asks for the recipe. I make this every year for Thanksgiving Day and everyone always manages to cram some in their already stuffed bellies! Comes from Nancy at allrecipes.com. (Note: One 29 oz. can of pumpkin will make 5 pumpkin rolls.)

    This was my favorite dessert growing up that my Grandma used to prepare just for me at her Sunday morning brunch. Bring's back memeories!! Blueberry was always my favorite but I would think just about any fruit would work. Great way to use up extra friut before it spoils!

    My Grandma would roll over in her grave right now if she knew I was posting her Moravian Sugar Cake recipe but why keep such a delish recipe under wrap? My family is Moravian this recipe comes straight from the church. My Grandma used to make this all the time on Sunday mornings for breakfast with coffee or tea. It's a bit time consuming, but well worth the effort.

    If you're like me and try to save some money shopping at bulk warehouses like Costco then here's a helpful tip to speed up dinners on evenings when time is tight! You already have all your veggies cut up & mixed in so just empty into pan and cook it up! Great for casseroles, chili, tacos, spagetti, pizza, burgers, you name it!

    Very tasty recipe I came up with by throwing together a bunch of my favorite ingredients that are always on hand. I would have used egg noodles, but didn't have any on hand so I substituted fettuccini instead and it was absolutley decadent!! Recipe is for one but can easily be doubled or tripled. I never measure so my measurements are apporoximate but it's almost all a matter of taste.

    Tasty taco flavored stuffed chicken breasts using ingredients readily avaliable. I serve with Knorr Taco Flavored Rice but could easily be made using white rice and adding in some taco seasoning. Added 3/1/06(Note- You don't have to use all of the mayo mixture, just enough to lightly coat each breast so the Doritos stick.)

    If you're a fan of creamy soups-you must try this!! I got it from the chef at a restaurant I used to work at but I've scaled it down to make it at home. I made it for my discriminating mother-in-law and my parents who both said carrot?? and raved about it afterward. Try it-it's sweet, creamy and suprisingly, addictive!!
