This is a salad I grew up with. It is wonderful as a garnish for churrasco. If you think you can't possibly eat raw onions, the secret is to soak the sliced onions in ice water or sprinkle them with sugar and leave them in the refrigerator for a couple of hours. That will take away some of the pungency. Then when you eat them, cut the rings into smaller pieces with your fork and knife..

This traditional Cretan recipe is one of our favorite Greek dishes. I had this many times in a restaurant and wanted to reproduce this at home.
The original recipe includes 3 kinds of Cretan cheeses (mizithra, malaka and staka), but it is almost impossible to find our Crete cheeses and we have to substitute it with different ones. Spearmint is essential for this recipe!
Impress your friends serving this butter as starter with crackers, small fresh breads, focaccia or thin roasted potatoes slices. A Tuscany dream!
