pretty much the base food for every meal that we cook. the "hikaka" at the bottom is an absolute must.. its an arab delicacy lol. note, if you try it, that the water amount probably isnt accurate. i dont measure things with a measuring cup-- just cover the rice with about 1/2" of water. also for easier removal, this works best with a nonstick pot
one of my family's favorite dinners, period. extremely easy, can also be tailored to what or how much of what you have. the difference is the ricotta. it gives it an amazing taste yet still doesnt taste like lasagne. try it.. with or without the mini meatballs!
Classic middle eastern dessert. Many countries claim it as theirs, much like the Lebanon vs Israel "hummus war".. but we ALL eat it. This is my tried and true recipe, there are a million variations and substitutions, some people like to add coconut, but this is the best plain-jane version available. I prefer the yogurt over buttermilk or water :) i hope you enjoy it.
we named this in honor of my husband's mom, who will throw together anything and call it dinner. she'd call this timman ou fassoliyah (rice and beans) but it isnt half bad. i added the basil myself for some sort of additional flavor, but its really pretty good and so fast. make with chicken or even cubes of beef or lamb. serve over my "iraqi timman"
i realize that most people associate "kabobs" with a shish kabob.. something grilled and on a stick, but for us its actually more of an arab burger, typically not cooked on a skewer.
frying isnt healthy but it sure tastes great!! served with toasted pita, and your choice of fresh veggies
