Not sure where I got this recipe. I’ve made it and really liked it. When I made it I used salted pumpkinseeds, as I couldn’t find unsalted. It was a little salty but not too bad. The next time I make it I will rinse the pumpkinseeds and see if that helps. I wanted to share and see what the nutritional information was.
THis is yummy. It has the texture of a cobbler filling but not crust The size of the cans of fruit isn't to important, the mixture you put in the pan shouldn't be to wet. The nuts are a must as they add texture that 's is missing from the crust, but actually the crust isn't all that important in this recipe.
If you love bacon, this salad is for you. It sounds like it would be heavy but it isn't. I found it in our local newspaper. It is wonderful mid summer when the tomatoes are freshest. highly reccomended!
