This was created on one of those nights when I wasn't awfully hungry, but had to cook dinner anyway. Since I was pretty unmotivated to start with, I was very surprised that this came out as well as it did. I tend to cook by sight and taste so these measurements are my best guesstimates. See what you think!
I came across this recipe years ago during one of my healthier eating phases. It is from "Healthy Cooking For Two (or just you)" by Frances Price, RD. It was so good, after the first time I'd made it I started doubling and then tripling the recipe just so I could have leftovers for work the next day! Usually I serve this with French or Sourdough rolls and sometimes a salad.
This is the ONLY way that I've fixed corned beef since this recipe was given to me years ago by a former co-worker - and I think of him fondly every time I make it. Not only is it the tastiest corned beef I've ever had, it doesn't shrink as much this way so there is more of it for me to eat!
I have browsed this site for many years and have finally come up with a recipe I felt was good enough to be posted here. I hope you enjoy this one as much as I've enjoyed the many that I've gotten from the rest of you!
