I scoured the Internet to try to find a lemon and apricot marmalade using fresh apricots, but all I could find were recipes that used dried or had pectin added. So, I came up with this.
Just a simple pilaf type dish. The mushrooms are what give it the flavor. You can use any type of mushroom, but I used a mixture of chantarelle and honeycup.
I created this several years ago when my pantry was bare. It came out so good, it's now a go to recipe for me.
Something I made up last summer. It's not really a finished recipe yet. It still needs tweaking.
I originally made this recipe to be a vegan German potato salad, but it morphed into something else entirely. It's really yummy!
