    When I discovered how few recipes representing Oman were on the site, I went searching. The NA/ME Forum will be spending January 2013 exploring the country & here is my culinary contribution. **2 of 3 people LOVED this! It took awhile for it all to come to a boil & from there I simmered 5 minutes. It thickened upon standing. Enjoy!**

    When I discovered how few recipes representing Oman were on the site, I went searching. The NA/ME Forum will be spending January 2013 exploring the country & here is my culinary contribution. **this is delicious! It was perfectly sweetened & lightened. I re-steeped adding 3c water, the last 4oz of evap milk in the can & only 1TB sugar. Also, 1st time, I added 2TB crystallized ginger & only 2TB sugar. YUM!**

    A variation of this recipe arrived in my inbox & was a perfect post-Thanksgiving meal. I successfully subbed preserved lemon since I had no fresh lemons. ;) I would bet that this recipe originally called for preserved lemons. As you go along, DO check for salt as you add preserved lemon. *I* rinsed my lemons. Rumor has it you don't NEED to.

    "Ready, Set, Cook! Contest Entry" Experiment gone right! Thank you Reynold's Wrap for the wicked easy cleanup! These were excellent for dinner but could also be served for lunch, appetizers, snack, school lunch, picnic... Feel free to use different chili powders to suit your taste. The recipe as posted is what I used & everyone loved them. This makes 20, which for my family was 5 per person & just right.

    For ZWT8, A French Love Affair challenge. I am adapting Chocolatl's recipe#479544 to be made in the crock pot. My boneless thighs nearly disintegrated, lol. This would be good over pasta, rice or polenta! ------------------------------------------------------------------------------------------- **i increased the amount of flour as I needed to complete recipe **I increased seasonings corresponding to increased flour **I changed the frying chickens to thighs because thighs will be uniform in size & do well with long cooking. **I removed the skin but not necessarily the bone **I did NOT cut back on the liquid because I needed more flour **I changed margarine to butter **I made mushrooms optional ;) **I added an extra garlic clove & minced vs. chopped them

    This arrived in my inbox from iVillage & was the only one of a bunch that I liked so I'm transferring it here. I absolutely love the combination of scallions & radishes (see recipe#478892). "This is no “ladies who lunch” tea sandwich topper. This is a punchy, sock-in-the-mouth spread chock-full of spicy radishes and pungent scallions. Smear it on crackers or toasted baguette slices for a zingy and quick appetizer." Tremendously easy, tons of flavor & very versatile as a dip, spread on crackers or bread or toast points, a condiment (on a burger?)...let your imagination wander. I think it would make wonderful tea sandwiches irregardless of the quote that came with the recipe. Maybe spread some into those early summer peas....

Tips and ideas: Prepared this spinach dish just before the meal to ensure that it´s served hot Serve as a side dish with this seabass recipe. Add a pinch of nutmeg when adding the salt and pepper gives the spinach an aromatic flavour.

    Shamelessly swiped from the 'net for ZWT8 from a Spanish website who reposted it from Spain GourmeTour magazine. This looks really good especially in the heat we've been having! Vegetable stock is easily substituted for the chicken stock to make it vegetarian (and leave off the ham garnish). If Calanda peaches are unavailable, substitute a sweet fleshy variety.

    This is more of a method than recipe. But... I am not a big fan of toast. When it comes with my breakfast at the diner, I eat it to not waste the money paid for it. My grandmother's homemade bread toast was, of course, an exception. But she's gone & bread making is not my, um...forte. BUT, I picked up a loaf of really nice artisanal bread at a bakery & had an IDEA.... your bread doesn't need to be round, it just can't be flat. This method produces toast that will make your head swirl. You MUST have a heavy, preferably cast iron, skillet. I recommend the best butter you can afford.

    This can be adjusted to tastes & heat levels by the amount of jalapenos used and whether or not you keep the seeds... or heck, try chipotles....or habaneros...;) You could even sub pepperjack! This was swiped & adjusted from one of the recipes that landed in my inbox.
