    This is my guilt-free not-to-sweet treat; It is quick and easy in the microwave. I came up with this after falling in love with those new Quaker Oatmeal Breakfast Cookies in apple cinnamon flavor and after eating entirely too many I decided to come up with my own apple induced oatmeal. This makes for a thick oatmeal. Use more soymilk for a thinner oatmeal.

    We use this as burrito filling, for quesadillas, by itself, or over rice. It is quick, easy, and can even be made vegetarian by leaving out the chicken. This is very spicy, so adjust the spices or leave out the jalapenos if you like it milder. It will still be delicious. The servings are really approximate, it depends on what type of dish you use them for.

    This recipe can be eaten as a side dish, over rice, or as burrito filling. Trying to incorporate more fiber into my diet my husband came up with it. I adjusted some of the seasonings to my taste and the result has become a favorite in our house. As with all recipes, feel free to adjust seasonings to your taste. I think it tastes better the next day, but it doesn't last that long normally. By leaving out the chicken it would also be vegetarian.

    I was told by my doctor to lower my cholesterol and started incorporating Oatbran into my diet. By making this simple change at breakfast I lowered my cholesterol 21 points in 3 months. Now I eat it because I love it. I use soymilk in the recipe but low-fat and skim milk are okay too. Also, I prefer "DelMonte" Carb-Cutter Peaches, as they have no added sugars.
