    The best tasting GF bread I've found yet, and the cheapest. The ingredients are the key to this bread, so try not to substitute. The flour mix is especially important, so if possible use gluten free flour recipe #110497 ( to make the cheapest, best tasting gluten free bread you've ever tried. This recipe is adapted and modified from one by Bette Hagman. The biggest change to the original recipe is the flour mix used. Cooking time includes rising, baking, and cooling.

    If you like pineapple upside down cake, you will LOVE this grilled pineapple. Basic ingredients compliment each other perfectly. This is really best when served still hot along with vanilla ice cream, with the warm sauce drizzled on both the pineapple and the ice cream. Prep time does not include time for the pineapple to macerate since that is very flexible.

    These are some tasty pancakes! Buckwheat is NOT wheat, it's not even related to it and is fine for celiacs or others who are sensitive to wheat gluten. So enjoy! The gluten free flour can be my recipe for gluten free flour; Or just use your favorite blend of rice flours, corn starch, tapioca flour or whatever works for you. These are great with fresh blueberries sprinkled on each cake once the first side has started cooking.

    An adaptation of a recipe from Bette Hagman's Gluten Free Gourmet. It handles more easily and is better tasting and more nutritious due to the addition of bean flour. This pasta is better than store bought dried pasta but not as good as normal homemade pasta made from durum wheat. Well we can't have everything now can we. The bean flour can be easy-to-find garfava flour, but if you can, make your own Great Northern Bean flour for this. It tastes much milder and will really improve the quality of the pasta. If you double the recipe, you can use 5 large eggs instead of 6 medium eggs. You can also freeze the pasta after rolling and cutting it- then just drop it into water whenever you want fresh pasta.

    In this recipe the tartness of the key-limes plays very well off the warm flavor of the cocoa powder and chili powder. Since I first made it I've tweeked it just a little but now I think it's more or less just right. The brown sugar and thyme are reminiscent of Caribbean cooking themes. Mild chili powder may be used if you don't want it to be too spicy; alternatively, if you want a spicier dish use more chili powder! You can store this marinade in the freezer prior to using, but once it has been used it should be discarded to prevent spoiling.

The cream cheese icing goes perfectly with this recipe. I created this recipe for my wife's birthday cake and it was a big hit! The apple filling ingredients start at the 2 baking apples, the frosting ingredients start at the package of cream cheese.

    This is the best chocolate cake I've ever eaten! Something between a mousse and a cake, it is so moist it will melt in your mouth like a chocolate bar. I tried about 7 different flourless chocolate cake recipes before I came up with this one which incorporates only the best of them all. This cake will only be as good as the chocolate you use, so make it good! If you are on a no-flour diet (for celiacs for instance) this cake is perfect- just use sweet rice flour to flour the pan instead of wheat flour. For an exotic treat, add 2 tsp key-lime zest or 2 tsp key-lime extract along with the vanilla extract. Cooking time does not include chilling time.

    If you are like many people and can't eat wheat, barley, or rye because of celiac or gluten intolerance, you need an inexpensive and nutritious substitute for regular wheat flour that will work for baking. This is my own version of such a flour. The majority of these components may be purchased very cheaply in Asian markets. The Great Northern Bean flour is not available on the market, but G.N. beans are very inexpensive and you can make your own flour out of them with a flour mill or even a regular coffee mill (just sift the flour through a fine sieve to remove the large pieces and regrind them). If you would rather use a ready-made bean flour, you can find garbanzo/fava bean flour in most whole foods markets. It is more costly than making your own and the end result will have a stronger flavor, but it will have the same general characteristics and nutrition value. This flour works well for most baking applications such as cookies, brownies, etc, but it will have a strong flavor until cooked because of the bean flour so it is not recommended for uncooked applications. For cakes you should add 1/4 to 1/2 tsp xanthan gum per cup of flour. For bread recipes you should add 1 tsp xanthan gum per cup of flour to simulate the effects of gluten, or better yet simply follow a recipe for gluten free bread. I find that the addition of 1/2 cup of oat flour adds greatly to the consistency of this flour, but due to the ongoing debate regarding the safety of oats to celiacs I have omitted it from the ingredients list. You may add it if desired.

    Easy to make extract turns the zest of 12 limes into the flavor equivalent of about 60 limes and won't leave bits of zest in your pie, pudding, punch, etc. It also has the benefit of storing much better than zest alone. Stored in a refrigerator this extract will maintain its emerald color and pure key-lime flavor longer. The zested limes can be juiced and the juice can be used immediately or frozen in an ice cube tray for later use; about 3 limes makes 1 cube of juice. One tsp of extract is enough to flavor 2 or 3 cups of liquid, or to replace 1 tsp of fresh zest in a recipe. For those worried about the alcohol content; the alcohol in this extract when used in a proportion of 1 tsp extract to 2 cups of liquid is less than that of 2 tsp vanilla extract in 3 cups liquid (a normal amount used in ice cream for instance). Cooking time includes extraction time and filtering time.

    I made this recipe because I cannot eat wheat gluten and wanted a crispy fried noodle. Most store-bought crispy noodles are wheat-based. Also, it is fun and easy to make these and they are very decorative and versatile. Can be seasoned with salt if desired, or can be dusted with powdered sugar and cinnamon for an interesting treat!

    Preparation time includes marinating time. Grilled chicken with peaches on salad greens and fried rice noodles; better than you'd think and easy to make! The main idea for this dish came from my wife who was in the mood for peaches. What can I say, it turned out to be a great idea! Now it's becoming a staple dish for us. Despite the oil called for in the recipe, it is actually a very healthful recipe because most of the oil is in the chicken marinade and does not actually end up in the food itself, which of course the nutrition calculator can not take into consideration. Makes a good main dish, a bit too much for a side salad.

    This caramel is very rich and gooey. It can be thinned with a little water to make a sauce for ice cream or it can be used as-is for a gooey candy filling. Great with apples too! Recipe can be doubled. Because the sugar can turn from caramel to burned rather quickly it is best to have all ingredients measured before starting.

    Useful when a vanilla flavor is desired but liquid flavoring can not be used or is not desireable. The powder is off-white and has the consistency of confectioner's sugar, with small brown-black flecks of vanilla. Also great for homemade vanilla ice cream because it adds little vanilla specks.
