    Freezes nicely, but doesn't last long. We buy the large packages of ground turkey at a warehouse club and make up a big batch, to save time and money. Garlic is thought to help boost the immune system, so don't be shy with it. The cloves should be fresh and firm, and when mashed (with the side of the knife) and chopped they should smell sweet and not too pungent.

    I developed this recipe to take advantage of Wegman's "Food You Feel Good About" Thai Stock, which contains (among lots of other good things) natural extractives of lemongrass, gingerroot, kafir lime leaves and sriracha chili. With this pre-made Thai stock, you can make this soup taste authentic without having to hunt for exotic ingredients. Slicing the chicken into super-thin slices is easier if the breasts are partially defrosted and still slightly frozen in the middle.

    Hearty and economical - about $0.50 per serving. We started with the recipe on the back of the Goya Navy Beans can as a starting point, and made adjustments to suit our taste. A smoked ham steak is much easier to work with than hocks, and provides a lot of inexpensive protein. Grilling the ham steak (optional) gives Rudy, my "squid" husband, something to do while I'm chopping the vegetables. Be sure to use fresh garlic - the cloves should be firm and smell sweet, not too pungent.
