    This is another of my Fijian friend Veri's traditional fare from Fiji - a group of islands in the south-west pacific, north-east of Australia. This fish dish is a Fijian favorite and utilizes common ingredients of the islands. It is the Fiji version of ceviche. Serve it with a fresh fruit salad.

    This is a Lithuanian recipe from my mother-in-law. She always uses some powdered sulphur, burned, to keep her potato mixture white, but I am too afraid to use it, so the last of my mixture always goes brown through oxidation. Don't worry though.... when cooked it reverts to it's proper 'whiteness'. As Lithuania is bordered by both Russia and Poland, Latvia and Belarus it's cuisine is influenced by them all, plus Germany, Estonia, Finland, and Scandinavia but it still manages to be different from them all.

    I find this a quick, easy, Diabetic-Friendly summer dessert. Good for family of all ages and a gem for dinner parties. Can be made ahead... may be stored in the freezer, for up to three months. Variation: Replace the mixed frozen fruits with a single frozen fruit, such as raspberries, strawberries or blueberries. Match the jam to the fruit. Recipe by Annette Sym, author of the Symply Too Good to be True cookbook series.
