Our New Year's Eve tradition is to have a Mexican extravaganza for an early dinner. Wanting something on the lighter side that goes well with Champagne we sought out an amazing Ceviche recipe. I took two recipes from Emeril on the Food Network's website and came up with this recipe. My husband and I lived in San Diego for 10 years and spent some time in Mexico eating authentic Mexican food, and I have to say this is the best Ceviche I have ever had.

After reviewing many diet soup recipes I adapted my own recipe. All diet soups are very versatile, if you don't like a certain vegetable just leave it out and add more of another. I make a batch of it on Sunday night and eat it for lunch and dinner. I have even snuck it to my husband with the addition of meatballs. He has no clue it is a "diet" soup. I hope you enjoy it as much as I do.

I got this recipe from Rachael Ray's new TV show. It is so easy and so good. I have made many French Dip's, but this is by far the easiest and tastiest. You won't be disappointed.

    Recipe #187277

This egg casserole is the best I have ever had. It is much more low-carb friendly than all other egg casserole recipes because it does not have any bread or potatoes. This recipe came from my Mom and she got it from her mother in law. This can be made a day in advance and kept in the fridge until ready to bake. We have included other veggies such as asparagus and zucchini. This is the perfect recipe for Christmas morning or any family gathering.
