These yummy muffins are wheat-free and low-fat, but high in both flavor and fiber! I got the recipe from the back of an Old Wessex Oat Bran container and made them for breakfast this morning: I thought they tasted really good, and my brothers liked them too (which is the more important test). Since they are made with 100% oat bran rather than with flour, they're a bit crumbly, so be warned. Let them sit several minutes in the pan to "firm up" a little before handling them. Next time, I think I'm going to use 2 eggs and use some flour in place of some of the oat bran, to see if I can reduce the crumbliness. But they're really nice the way they are, too!

These muffins are great for breakfast, snack, or any time!! Really moist, deliciously spicy, and lightly sweet -- they are filling yet not heavy at all, and they have such a nice crunch from the sliced almonds. Healthy and yummy. They received an emphatic stamp of approval from the Picky Sibling Taste-Tester Association (though one of the extremely persnickety members did ask that the nuts be ommitted next time). :) The original recipe is from The American Country Inn and Bed & Breakfast Cookbook, and the book's authors got it from the Havenshire Inn in Hendersonville, NC. The batter keeps well in the fridge, and baked muffins freeze well. I think these would be really good with chunky applesauce as well.

    Recipe #169032

This recipe is from the website. I thought it looked really good and had some interesting twists to it: orange zest, applesauce, and not too much sugar so the fruit flavor can really shine through. I haven't tried it yet, though, so the serving and prep times are just a guess.

    Recipe #168806

These yummy blueberry pancakes are great for a special weekend breakfast. Have kids help stir in the blueberries and say the "magic spell!" Original recipe is from -- serving size is a guess, I'm not sure how many pancakes this actually makes.

    Recipe #168604

This yummy, wholesome recipe is from Check the site out -- perfect for summer, when the fresh fruit is pouring in!

    Recipe #168603

Moist and flavorful! Vary the fresh herbs to your liking. This is good when you add some sliced potatoes, carrots, and a little extra olive oil for the last hour of roasting. Serve with a green salad, and you’ve got your entire meal ready! Even better than the lamb itself, in my opinion, is gnawing on the bone afterward…heh heh.

This is basically the easiest dessert EVER, but it is so good! It’s good for you too :-) I’m sure someone else has come up with this somewhere in the world, but I invented it while at the college cafeteria. I was craving something with fruit and both creamy and crunchy textures, and this is what I ended up with. Quick, simple, and delicious. I prefer to use granola with raisins in it. This would also be a great snack.
