    Robust Onion-Olive Tapenade
    Handle

From "Eat Well Naturally," a free e-letter with lots of yummy, healthy recipes. The cuisine of Provincial France has given us a wonderful gift in tapenade, a savory black olive paste that is absolutely divine on bread, pasta, or salads. It‘s a cinch to make and completely versatile: you can use it as an appetizer, snack, salad, side, or as a tasty condiment for your main dish. Heart-nurturing fatty acids and the healthful properties of garlic are just a few of the reasons this robust spread (or dip or condiment) is such a popular feature of the Mediterranean diet. Make sure to use good quality olives, not the canned variety!

    Select
    Delicious Walnut Couscous
    Handle

This combines couscous with walnuts and vegetables, then punches up the flavor with a peppery blend. Really great vegetarian dish! I eat couscous a lot at college, so this is my quick, easy method for one person. Feel free to fiddle with the quantities and ingredients -- I just posted it here so I wouldn't forget it. I buy plain organic couscous and dried vegetables in bulk at my local health food store. I also use Frontier Organics "Pepperman" Seasoning Blend, to taste (contains salt, black pepper, chili pepper, garlic, and bell peppers). They wouldn't let me put it in the ingredients. :) Scrumptious!

    Select
    Whole Wheat Sour Cream Cornbread
    Handle

I found this recipe on the blog "Ponderings from Picket Fence Cottage" as part of a post on whole foods. It has a really unique flavor, not too "corny" and with a slight tang from the sour cream. The texture is excellent, tender yet firm. Hope you enjoy it.

    Mary Poppins' No Bake Cookies
    Handle

As Mary Poppins would say, these are practically perfect in every way!! They have more chocolate and less sugar/butter than most no-bake cookies. Brown sugar adds depth of flavor, while extra vanilla and a pinch of salt liven it up. Besides, they are quick and easy, and everyone loves them! I think you could reduce the sugar even more, but they're great as written. Try them with extra dark (Dutch process) cocoa powder...mmmm.

    Oatmeal Treats
    Handle

Another one from ye olde recipe box…this was in my mom’s handwriting, but I’m not sure where she got it from originally. The recipe called for "flour mix," which I assume to be self-rising flour. I haven’t made these myself but they sure look good, and pretty healthy too.

    Recipe #179475

    Select
    Red Lentil Soup
    Handle

Healthy and delicious. Serve this simple soup for lunch, or pair it with bread and cheese for a light supper.

    Select
    Low Fat Morning Glory Muffins
    Handle

Lovely muffins packed with succulent bits of raisins and carrot, studded with crunchy sunflower seeds, and permeated with the flavors of orange and cinnamon. Served with fresh fruit and scrambled eggs, these are great for a special breakfast!

    Select
    Decadent Chocolate Chip Cheesecake
    Handle

A velvety, rich cheesecake that I remember having for my little brother’s birthday. Easy to make and very yummy. Recipe is from the Hershey’s Chocolate company.

    Recipe #177496

    Select
    Velvet Shrimp
    Handle

This looks deliciously decadent, yet it's from Light & Tasty so it's won't break the calorie bank! I plan to make this for my brother's birthday this summer (he loves shrimp and fettucini).

    Recipe #177340

    Select
    Heirloom Tomato Salad
    Handle

Yummy and very pretty salad perfect for summer. Use fresh tomatoes from the farmer's market or roadside stands -- or if you're lucky, from your own garden. Nice dressing that is also good on other salads, not just this one!

    Recipe #177324

    Select
    Kiwi Smoothies
    Handle

YUM. Smooth and delicious, perfect for a hot summer afternoon! Super healthy and packed full of fruity flavor. Recipe is from Light and Tasty.

    Magi’s Turbans
    Handle

Another one from ye olde recipe box.

    Recipe #176588

    Select
    Hearty Whole Wheat Biscotti
    Handle

These are very good. My mom used to make them when I was younger, and as I remember, they were especially nice dipped in coffee (or hot chocolate or tea...). Not too much sugar, made with whole grain, and they store well. Enjoy! Serving size is approximate, since we haven't made these for a while and I can't remember exactly how many the recipe makes.

    Recipe #176227

    Select
    Ursula Faith’s Ginger Cookies
    Handle

From ye olde recipe box…I’m not sure from where my mom originally got this recipe, but it has been there as long as I can remember. Packed full of spicy, molasses-y sweetness. I have not made these myself so I can’t vouch for them from first-hand experience, but they do look quite good. I am really not sure about the serving size or prep time either, so I just gave it a wild guess!

    Select
    Ricotta Apple Pancake Topping
    Handle

Wow-- yum. I had some ricotta cheese in the fridge, and my latest craze is cinnamon and apples, so this came together naturally. I love coming up with different toppings for pancakes! If you use unsweetened applesauce, you may want to add a little honey. It’s a very freeform recipe, so adjust ingredient amounts to your liking-- it's basically an idea to get you started. Nutmeg would be good in this along with/in place of the cinnamon. I ate the topping cold on warm pancakes, but it would be great heated up too.

    Select
    Apple Ricotta Bites
    Handle

Delicious combination that I discovered the other day. My new “thing” is experimenting with apple slices and various toppings, and this is definitely a keeper!! Use good-quality ingredients, preferably organic, to get the full flavor experience. Great stuff for snacks or appetizers. Vary the amounts to your taste-- this is about right for me (and for the size of apple I’ve been using). If you use unsweetened applesauce, you might like to add a pinch of brown sugar or a wee bit of honey.

    Recipe #173294

    Select
    Celestial Cinnamon-Almond Apple Bites
    Handle

My new favorite snack. Basically, this is heaven: "celestial" doesn’t even begin to describe it. Fresh apple wedges slathered in rich almond butter, sprinkled liberally with that spice of the gods, cinnamon. It’s all good for you--and it’s all so good. I say to you, fellow mortals, it was a blessed day when I stumbled upon this sublime flavor and texture combination. The components would travel well in a lunchbox, to be "assembled" on site -- for picnics, brunches, lunches, or anywhere you need a quick and delicious little something.

    Recipe #173293

    Select
    Golden Granola
    Handle

A light, sweet flavor with lots of crunchy nutrition. I love granola with yogurt, ice cream, baked apples, or simply with milk and fruit for brekky! This recipe uses applesauce to cut down on fat and calories, and molasses to reduce the cost – but it still tastes every bit as delicious!

    Recipe #171733

    Select
    Marvelous Maple Walnut Granola
    Handle

Aw man…this stuff is so good! You gotta try it! Full of sweet, crunchy, wholesome flavor. I love eating it for breakfast with milk and fresh fruit. And it’s also great with yogurt, ice cream, sprinkled on muffins, pancakes, cobblers. I’ve made an awful lot of granola in my time, and this is one of the best combos I have ever come up with. You can add dried fruit if you want, too, but I prefer to just make it plain and add fruit as I use it. What I love about this method is that you mix everything in the dish, rather than messing with a bunch of saucepans and bowls. Super simple and flexible, and soooo yummy!
