This recipe comes from Alton Brown and it's the only way we have rice anymore. My servings are quite a bit smaller than his, though! You can use chicken or veggie broth in place of the water, or add herbs and spices.

I don't remember where I found this recipe - I've made it so often, I've memorized it. The trick to these meatballs is to only plan to use half of them - that's all I ever have left by the time I'm ready to put them in something else. It's the only time I've ever had ground beef melt in my mouth.
This is unlike any Cheese and Tomato pie I've found, but it's irresistable! It's also fattening, but it's major comfort food. I grew up on this, with a garden salad on the side. There's no science to this recipe - just throw it together as you like and bake till it's done.
I make this salad all the time for my kids, and my youngest (Morgan) absolutely loves it. If she eats nothing else on her plate, this salad is always gone. I usually use regular old vine tomatoes, but it's equally good with a pile of halved cherry or grape tomatoes. No matter how you make it, it's ridiculously easy and really yummy.
