I have a thing for pot pies. Love them, but they're not very good for you. I decided to try to make my own to see if it was a little bit better for you. My results are very yummy. Even my step-son, a very difficult to please critic, loved this.
The interesting thing about this recipe is that you can make ahead the chicken/soup mixture, add the veggies, and freeze it and then later add it to the pie crust if you need a very no-fuss meal.
