    Chinese food was never my favorite until I started making it myself. For some reason I always thought it would be difficult and require a ton of foreign ingredients. Not so. This dinner was perfectly simple and bursting with fresh flavor.

    you can use chicken broth to cook your rice also, it makes it tastier. It depends on how much rice you want as to how much broth you will need. Don't lift lid or stir rice while it is cooking! It makes for a mushy rice. Long-grain brown rice: produces light, dry grains that separate easily. Short-grain brown rice: yields fat, almost round grains with a higher starch content than the other two varieties; the grains stick together when cooked. Medium-grain brown rice: has a size and characteristics between the other two rice varieties.

    This is deliscious! I really don't care for meatloaf but my dh and 3 sons love it, so I came up with this healthy recipe. I am all about the flavor and this recipe is a very creative combination of flavors, very gourmet! (don't bother with the store bought can, leave a piece of bread on the counter for a few hours covered with a paper towel, then crumble.)

    This is amazing! If I had to choose just one word to describe it, it would be fresh, fresh, fresh! So perfect for a simple summer meal. It doesn't get any healthier than this either, so basically, it's the perfect dish in my humble opinion! Dont' forget to rinse your quinoa before you cook it to remove the natural "soapy" film! Quinoa contains more protein than any other grain; an average of 16.2 percent, compared with 7.5 percent for rice, 9.9 percent for millet, and 14 percent for wheat. Some varieties of quinoa are more than 20 percent protein. Quinoa's protein is of an unusually high quality. It is a complete protein, with an essential amino acid balance close to the ideal ... similar to milk!

Chop your other veggies while you wait. Salting the eggplant removes the bitter taste. Use FRESH herbs! It makes all the difference, especially since there is no sauce in this dish.     I got the base of this recipe from my mom. I use Organic Vegetable Broth instead of Chicken broth just because I love the combination of flavors and natural spiciness.     This is a simple, healthy version of Chicken Teryaki. My kids love it! It has far less sugar than bottled Teryaki sauce and no perservatives/additives. I always have Tamari and honey on hand, making for a quick, last minute super. I cook my chicken in my pressure cooker (which I couldn't live without!) I can throw in frozen solid chicken tenderloins and they cook in 3 minutes and all of the moisture is locked in. The chicken falls apart and is very moist & flavorful. If your not lucky enough to have a pressure cooker, first, put it on your next birthday wish list, and for now bake, boil, poach or grill your chicken, do not fry your chicken! * Tamari, unlike regular soy sauce, does not have any additives/perservatives in it. Use the low sodium Tamari.

    Again, my kids love this! Yet another "sneaky" way to get a serving of vegatables. Salmon is so so good for you! It is a great source of Omega-3, which is an essential, healthy fatty acid. Good for your cardiovascular system, brain and your overall health! Other sources of Omega-3 are: walnuts, flax seed ( which I grind and put in breads, muffins, oatmeal, yogurt parfaits & smoothies), olive oil, pine nuts, free range eggs, green leafy vegatables, anchovie & sardines.

    This bread is a combination of two recipes. One from Williams-Sonoma (which took around 8 hours to rise and didn't turn out so well for me) and an Italian herb bread from s'kat. I like how this version turned out very light and airy and aromatic. I used rosemary from my garden and think the lemon really brings out the flavors. * I threw all of the ingredients in my KitchenAid mixer, gradually adding the flour last. * I let my oven warm at 400 deg. for 1 minute then turned it off and put my covered bread in to rise. This really does the trick!

    The yummiest, easiest huevos rancheros you'll ever taste! Yes, my little ones eat this too! You can adjust the spicyness of this one easily. We make this as a Christmas morning tradition! Frying your own corn tortillas is key to this recipe! Also, be sure to not over cook your eggs!!!!! Over Easy! It totally adds to the sauce and brings all the flavors together! Oh, one last thing, the Queso Cojita is a must also! Use regular cheese at your own risk! ;-) It's easy to find.... at least here in Az. It's in an airtight, circular package. VERY AUTHENTIC tasting!!!
