Easy and quick for a weeknight dinner, especially if you have cooked rice on hand. Using fresh garlic and ginger (rather than powdered) doesn't take too much extra prep time, and gives this recipe a much more complex flavor.
I like to prepare this the night before and then refrigerate overnight. It gives more time for the flavors to blend. If you don't have that much time, you can just put it straight into the crock pot. This makes enough sauce for 1 lb of pasta.
A lighter, vegetarian potato soup that can be made in the crock pot. This is one of my husband's favorite dishes. An immersion blender makes it easy to produce a thick, rich texture. If you don't have an immersion blender, you can put the soup in a regular blender or food processor to puree, but that can get messy.
I prep this the night before and take it in a mini crock pot to work. It cooks all morning and makes my officemates jealous, and then I have fresh, delicious chili at lunchtime! One pot makes 2-3 lunches for me.
