A great way to use leftover plain quinoa that makes fluffy, but hearty, filling, healthy muffins that I call Christmas muffins because of the red and green. I make quinoa in my rice cooker the night before (1:2 ratio) (also great for fluffy pancakes).

    Recipe #519535

Basic ingredients, easy prep, but delicious results with no ham or sausage needed. (Adapted from Ina Garten's original recipe for double the amount and normal cooking.)

    Recipe #519422

I’m a sucker for all things coconut and now that we have healthier options for incorporating it I like to modify existing recipes. This is a healthier version of a classic Cranberry Orange muffin. I’ve eaten 2 just now and had to make myself stop. Original version of this I was inspired from is recipe #75662 on this site.

    Recipe #489471

This is the best pumpkin cheesecake! You would never know it is missing anything! It is firm the way cheesecake is suppose to be and no Soy milk or Tofu needed.

    Recipe #444249

This is a variation of a cookie recipe I love, just to give credit where credit is due... The Kind Diet's Oatmeal, Walnut and Dried Plum cookies. They are delicious but a lot of sugar so I tried another version and I think they are just as yummy!
