    In my kitchen just about everything has to serve mutiple dishes. This one really is a staple for many recipes. Its great as a salad dressing, vegetable dip and I use it in fish recipes often. Its absolutely addicting.

    Excellent balance of flavors and super easy. Great flavor without the smoke from high heat blackening. No need to heat a cast iron skillet to surface temps of the sun for this one. You can use your non stick pan on medium. Not a true blacken but exceptional flavor just the same. I recommend using Emerils Essence for the creole seasoning. Got this little treasure from a package insert of tilapia fillets.

    Early in my career I spent many days on the road. To make it interesting I searched for the perfect burger at every little road house I could find. I never found it. Thanks to a rusty old sign hanging atop an abandoned general store championing their smothered burger, I realized it was not the burger that I was looking for it was the technique. Thus was born the road burger, my own recipe, its simple, hearty and absolutely perfect. Please use a ground beef, not ground chuck, you will need the fat. Probably not for heart conscious eater, but makes a great splurge meal.
