Bananas and strawberries just go together so well, the bread has to be good. I try to keep things lower fat when I bake, so I used applesauce instead of oil or shortening. The loaves are very moist and delicious. Try them with strawberry preserves or strawberry swirled cream cheese. Brummel and Brown's strawberry yougurt spread is fabulous as well. And it freezes very well.
I was looking for a change of pace recipe for pork chops and decided to make up one of my own. This made the pork chops very tender and tasty. A big hit with my husband, but not so spicy that the kid wouldn't eat it.
I was looking for a cassada cake recipe, and nothing appealed to me, mainly because they all called for citron, which I don't like, so I came up with my own version. But I cheated and used a white cake mix instead of scratch. It turned out nicely and was devoured when I took it to work for a birthday.

Wonderful moist flavor that just lingers on your tongue. This is by far one of the best zucchini bread recipes I ever tried. I used a clay baker to make these loaves, but regular loaf pans work well. They freeze well too. You could use egg substitute to lower the fat ever more.

I got this recipe from my 9th grade home economics teacher. It is a great comfort food for those cold winter nights when summer fun seems so far away. I decided to post this because my daughter has fond memories, but her version is way different from mine.
I had left over ham and hard cooked eggs from Easter and came up with this to have for breakfast, lunch or anytime. And since we are trying to reduce our fat intake, this worked very well. I used low-fat cheese and only one of the egg yolks. Any salsa would work. I used a black bean and white corn one.
