Fast, easy red curry lentil recipe. So quick to make, it'll work on a weekday night. 100% of the credit goes to Lindsay, the blogger from pinch of yum. Please visit her website (http://pinchofyum.com) and give her thanks for sharing this.
Fast, easy, delicious. What else could anyone want? I've adapted this "recipe" from a dinner my friend, Anne, made for me. The recipe is being passed along from person to person as I've made it for friends, and they've made it for others as well. This is kind of what food and cooking is all about, right?
This recipe is not particular. Make changes to suit your tastes. I love lime juice, so I add more and more fresh juice every chance I get.
I am addicted to baked tofu!! Thank you Mollie Katzen and The Enchanted Broccoli Forest for the excellent marinade recipe! The tofu never lasts long enough to make it into a stir-fry at my house. I end up eating it by itself. I love it hot or cold. And of course absolutely everything to do with this recipe can be adapted to taste or what you have in the kitchen. Enjoy!
This is a great, healthy, low-fat, vegetarian chile. My friend, Lauren from Alaska, made this for me, and I've been hooked on it ever since. It's easy to make and the lemon and cilantro at the end add a little special something. Plus, it's easy to adjust quantities and ingredients depending on what you have on hand. Enjoy!
