Original idea from Starbucks coffee shop. Any tea can be used--green, green with infusions (e.g. mango, citrus, orange) black, white. This recipe uses green tea--it is very refreshing for hot summer days.
This condiment is VERY HOT, and should be used sparingly until you get used to it. It will be found on every table, for every meal--it is part of the W.I way of life. It will also be added to soups, stews, curries and other cooking as a cooking ingredient--has a unique flavour.
This is a traditional West Indian recipe, which will vary slightly from island to island.........this version is from Trinidad. Don't be put off by the look--it tastes delicious. (I don't cook with salt, so some may need to be added for personal taste.)
