This is such a great refeshing dish for the summer.It makes a great light lunch or dinner.I usually serve it on a bed of lettuce and crackers or with some slice vegetables (tomatoes,cucumbers carrots). You can adjust this to your taste.
This salad is so easy and you can use it as a side dish or as a meal in it self. Everyone always wants me to make it for cookouts or they want the recipe.You can add just about any vegetables to this. This will be one of your families favorite.
I have lived in the south all my life and we have large get togethers where we cook a pig (called a pig picken)and have all the trimings. This cake is the second best part to this tradition. Oh so good!
