Authentic yellow rice, Cuban style, with a little bit of DH's spicy flair, without worrying about the cost of saffron. This is a must in our house. Its fast, simple, so yummy, even the kids love it. I usually have to double recipe so I can bring leftovers to work. Goes great with our Cuban chuck eye steak and Chimichurri topping, or even a marinated chicken dish.
Got this recipe from a Meijers brand Cream of Mushroom Soup can label. It came out creamy, warm and satisfying; even my picky eaters ate it. We had it over angel hair pasta, but I'm sure it would be delicious over rice or a couscous as well. I didnt want to lose the recipe, so I wanted to post on here. I'm sure it could be tweaked into a Crockpot recipe, too.
This is from a Meijer's brand label of cream of chicken soup. This has got to be the easiest, fast, and cheapest way to make a soul warming comfort dish in a hurry, on a week night. Made this way, you could substitute rice for the pasta, or crab or shrimp for the chicken. If desired, you could also add 2 cups cooked spinach for color.
Ok, needed Chimichurri for steak the other night, and didnt have any cilantro (or even parsley to pretend!) Not even dried! So....made this up in a pinch, and thought what wonderful things it would taste great on...Steak, Bruschetta, grilled Chicken, By itself even! Was sooo yummy mixed in with my Yellow rice that we had with the steak.
