    This is a fun tasty recipe that is a bit different than your regular chicken and veggies. The peppers give just a hint of heat. When peeling your peppers you may want to wear rubber gloves, especially if you have sensitive skin. The oil from the peppers can burn so make sure you don't touch your eyes. This is a great meal to stretch your dollar. This makes enough for 2 large casserole dishes. After baking the casserole, let cool and freeze or divide into smaller containers and freeze. I have added a picture of how the poblanos should look after they are roasted.

    A yummy juicy meatloaf that everybody loves. I prefer the smaller loaves baked on a wire rack over a baking sheet so everyone gets a lot of delicious sticky glaze. You can find panko in most grocery stores in the bread crumb or asian section. It's important to use them for their finer texture. It keeps the meatloaf lighter.

    This is my favorite recipe for acorn squash. It's very sweet, but not overly so. I based this off a recipe by Paula Deen. It's best to use real maple syrup. My husband who doesn't like squash and my 3 year old daughter really liked this. I served it with a pork roast and mashed potatoes.

    Found this on foodnetwork.com from Aaron McCargo Jr. My three year old saw them and said "I want those this week!" So I am posting here for everyone to enjoy. You could serve one as an appetizer or 2 for a main dish. I am always on the lookout for things I could make, freeze and enjoy later and these are perfect. Just bake, cool, pop in a freezer bag or container. When you are ready to serve again just thaw over night in the freezer and reheat in the oven or microwave.

    I attended a cooking class today through the NMSU Valencia county Cooperative Extension service and this is a recipe we made in the class. It is very refreshing and makes a great side dish. You could even serve it with some nice crusty bread for a light lunch. It is best to use vine ripened tomatoes instead of a roma tomato which doesn't have much flavor. I don't like black olives so I leave them out. The cooking time is actually the time it takes to sit before serving. There is no actual cooking.

    This is a very homey comforting pork dish. It doesn't take a lot of work or ingredients. I was looking for something that would just taste good and have a wonderful gravy. The onions and garlic add a really nice mellow sweetness to the dish. I used yellow onions which are sweeter than white, but almost any kind of onion would work. I would not use red onions though because the flavor is much too strong. My family loves garlic so I used more, but make it to your tastes. My 2 year old gobbled it up. Left overs are delicious!

    This is a super simple recipe. So easy to just throw together. You can add whatever spices and veggies you would like to make it your own! Very similar to a roast chicken dinner, but way simpler. I mashed it up with a fork and fed it to my nine month old baby and she loved it too! Best part is there is only one pot to clean up at the end.
