When fresh cherries are in season this makes a delicious, simple desert. Serve warm with a little pouring cream or vanilla frozen yogurt...YUM. Recipe from a Mediterranean cookbook. ( You can use 2 15 oz. cans of stoned black cherries, thoroughly drained, if fresh aren't available.) You might also add kirsch to the batter for a special dessert!
This is a Greek recipe from a Mediterranean cookbook, using marinated lamb steaks or chops that are slow-cooked for an unbeatable, tender flavor. The dish is sealed like a pie, with a flour dough lid to trap in the flavor, but a tight fitting foil cover will work, too. Prep time includes time for marinating.
Haven't made this yet, but it sounds promising and I want to record it...original recipe from Southern Living had tofu...I'm substituting chicken because I just can't get on the tofu bandwagon. But for all you tofu-lovers out there, feel free to adjust ingredients!

I think what was missing when I first posted this recipe is SALT...it was probably initially omitted due to sodium restricted diets in The Healthy Heart Cookbook. I would add this in (to taste)! And some fresh parsley as well! Also, make sure that you are using concentrate or the orange flavor will not be very pronounced. Hope this helps!
