    I love this recipe it is fantabulous, and one of my very favorite dishes that I make. If I have any leftover filling I usually stuff a couple of hollowed out bell peppers with it and bake alongside the stuffed eggplants, so you don't waste any of that yummy filling and it is delicious that way too.

    These are delicious and different, and they actually freeze really well for an easy meal later. When freezing these, I freeze them after they've already been baked and cooled, then I just pop them in the microwave for a couple of minutes until reheated. You could also try other fillings, I like to also add a couple of shakes of Italian seasoning to the filling while cooking. They are a favorite in my house, I hope you like them too.

    This is my personal favorite and my speciality, I have been using this recipe for years, you may use a package of chicken tenders or breast meat instead of the whole chicken, I couldn't put that in the ingredients, but it is a much quicker alternative. The dumplings are the actual secret, these dumplings cook on the inside and are not soggy, they turn out like fluffy little biscuits on your chicken soup. It's beautiful, even my Aussie hubby loves this dish, I hope you like it too.

    My perfect apple pie, this has always been my favorite pie which I am often asked to baked for family get togethers. The recipe is actually one that has been in our family for years and is my personal favorite. I like the level of cinnamon spicyness it has as well as the perfect crust which is my grandmothers recipe. This recipe is a sure thing for the perfect apple pie. I am from Texas originally, but have lived in Australia for 3 years now, since I cannot find the shortening here that the crust requires I substitute this with soft margarine spread. It works great as well, just keep all crust ingredients as cold as possible for a light flaky crust.
