A quick and easy way to serve up tofu! I debated even posting the recipe but I love and wanted to share the combination with the seasoning. I typically just use my Foreman Grill, the tofu gets a nice brown and crisps up quickly. Goes well with buttered rice and veggies. The left overs can be used to make a a hot tofu and cheese sandwich.

    Recipe #413515

A yummy fresh sandwich that is easy to whip up and double if needed. Sprinkling the avocado with salt makes the sandwich mouth watering. If making just for yourself or if you have left over avocados, leave them in their skin, sprinkle the flesh with lemon juice, wrap tight in tin foil, and place them in the fridge. This will prevent them from browning and you can enjoy the avocados the next day.

    Recipe #436785

As a child, my mom would always make random meals with hot dogs. Although you knew they were there, it always seemed like a surprise or treat when you bit into them. Now that I am vegetarian, I kick back to my childhood days with this simple soy hot dog and baked beans recipe. The left overs hold well and are great heated up for lunch.

    Recipe #436065

This is a simple and delicious way to use up extra eggs. The caramelized green onions go incredibly well with the smoked cheddar. The mini quiches are adorable and reheat well the next day. My boyfriend loves bacon (and I'm a vegetarian) so I made half the quiches with bacon and half without!
