    A different way to use that wonderful veggie when it is so abundant at this time of year. Easy to make and makes a good side dish. This came from TASTE - a magazine put out by the British Columbia Liquor Control Board. I want to keep it safe.

    A fantastic alternative to the ho-hum baked beans served at BBQs. This tasty side can be served hot at the BBQ or cold as a salad type dish. Really good the day after. Just add some more liquid and warm slowly, covered. Black Eyes have a natural smoky flavour and go really well with BBQ or just try as a side dish with whatever! I have had this recipe for about 30 years and just love it when I rediscover the wonderful blend of tastes. For best results, do not use canned Black Eyes - although, speed may require that you do... the taste won't be the same. Well worth the effort of soaking and preparing. Time of preparation does not include soaking time.

    Planking brings out the full flavour of salmon and this recipe from my favourite BBQ buddy, Ted Reader, is one of my favourites. It is so easy and incredibly delicious. You will need an untreated cedar plank (at least 10x8x1 inch), soaked in water overnight. Preparation time does not include soaking time for the plank.

    An Irish recipe that is just too good not to share. It comes from an old book, "The Best of Ireland". This is made with chunks of salmon with eggs, mushrooms and rice in a flaky pastry and it so tasty! Serve with hollandaise sauce and some steamed vegetables. It looks a lot harder than it is.

    This is a little work, but well worth it. An Irish fish pie is wonderful comfort food and a meal in itself. The fish that I used can be replaced by whatever you can get fresh, just make sure you have a firm white fish and a smoked fish. The addition of live mussels is also a great boost.
