    This isn't a recipe so much as it is a formula. You can swap out the protein and vegetables for whatever you feel like, trade out the red paste for green, and serve over rice or noodles as suits your fancy.     This has become a mainstay at my house. It evolved out of a recipe I saw on the Food Channel a while back. I've done this recipe with fish filets, chicken breast, lamb and a number of other things, and for some reason it's always worked. You just have to use an appropriate wine for your meat of choice, i.e. a nice fat Cabernet will work well for steak, but will gag and bury any white fish.

    Had some Red Chard that needed a good using a little while back, figured "hey, it's kinda like spinach... why not do up some saag with it?"... the result was not only tasty, but it was visually very stunning as well. I use Patak's Vindaloo sauce here, as it's a quick way to get the right balance of spices, but if you've got a spice set that you like, that will no doubt work too.
