Ratatouille, my way. I just wanted to use some vegetables I had in the chill box, and dumped it all together in a pot. It ended up wonderful!
Also, I didn't bother salting the Eggplant first, the dish came out fine just adding it as is.
Although I am a meat eater, I do enjoy well prepared vegetarian/vegan food. The Whole Foods Market near me makes a Tex/Mex kinda flavored Seitan salad, and this is my attempt to make it. Even my meat loving husband likes this.
This recipe is from Alton Brown and is the best Mint Julep I've had. It doesn't look like much, but it's very refreshing. The one thing I
do is bash the mint and sugar in my mortar/pestle, instead of a glass.
I don't care for Weetabix cereal as a cereal itself, but the recipe on the box I saw years ago for using the cereal in meat loaf is insanely yummy! I figured, people put corn flakes in meat loaf, so why not try this. I add green bell peppers as well as the red called for.
