    I was a vegetarian about 10 years ago and I was always trying to find good creative vegetarian dishes. My husband took me to this vegetarian restaurant called The Spot in Hermosa Bch., CA. The food there was AWESOME! They had a cookbook and I bought it! This is one of the recipes in it. I made it years ago and it was FAB! Serve this with the Mushroom Walnut Gravy that I will post next. You don't have to be vegertarian to enjoy this dish! Actually I prefer this over regular meatloaf. =)

    My mother used to make this banana bread for us often. I have fond memories of waking up in the morning to smelling mom's homemade banana bread baking in the oven on a cold rainy day...AHHHH!!!     I made these cookies with my mom when I was young. My daughter and I now make these every year for Christmas keeping the tradition going. This recipe comes out of a darling cookbook dated 1947 called Best Loved Foods of Christmas. The pictures and graphics are so adorable. Baking the cookies isn't always the fun part but the decorating is a blast! My daughter asks me every year about SUMMER time Mom, can we make Cutout cookies again this year LOL! I always say YES most certainly! The time it takes to make these is worth the time. If you share these with others you will get so many compliments! When I make these I break it up into a 2 day job. First day we bake the cookies and next day we decorate. These cookies also store well. I store them in a big air tight plastic container. Anyways have a blast making these. Your children or Grandchildren will grow up having fond memories of you and them baking these as I do with my Mother!

    This is the recipe that I use for the Cut out frosted butter cookies. This recipe is also in the Best Foods of Christmas cookbook. I always double this recipe so we have plenty of frosting to go around for everyone to decorate. I also divide the frosting into thirds. I'll take one bowl of frosting and add red food coloring to make it pink and add peppermint extract. In another bowl of frosting I'll add green food coloring for green frosting. In the other bowl of frosting I keep it white for white frosting. YEAH now for the FUN part.

    Here is a much healthier recipe for jalapeno poppers. The peppers are stuffed with mushrooms, zucchini, corn and manchego cheese. These poppers get baked in the oven. Wouldn't these be nice to serve out by the pool with a margarita. Yum! I think yes!
