    My husband doesn't care for beans but he really enjoyed these. Recipe is easy to make and reminded me of cooking a pot of beans over an open fire while camping. You can modify to your personal taste, for example, if you prefer ham flavor rather than ground beef; no salt; add a little more red pepper for more heat; etc. Hope you enjoy the recipe. Recipe is a modified version of a County Line BBQ recipe.

    This is a healthy, light, and tasty recipe that I modified from a recipe. You can use Pork tenderloins or skinless Salmon, if desired. You can also serve the finished product right away, or, as I did, refrigerate and let all the flavors blend for awhile. I made it in morning and heated it up for our evening meal. When heating in oven or microwave, be careful not to overcook. Hope you enjoy it.

    We had these last night with grilled Salmon and I was surprised - they were very tasty! We really like sweet potatoes so I look for different ways to prepare them. An outdoor grill or a George Foreman grill can be used. Quantity of potatoes and seasoning can be adjusted to your personal preference. Recipe came from our grocery store's Apron's cookbook. Enjoy!

    A wonderfully light and tasty recipe - easy to prepare. You can also use chicken with or without shrimp. Easy recipe to conjure up your own variation. If you like a stronger lemon flavor, I recommend adding just a little more lemon rind. Recipe came from Cooking Light (2003), but I modified it just slightly.

    This has been at the top of our favorites since 1991. Slightly labor intensive to make, but well worth it. Very light - the fontina white sauce with nutmeg and dry vermouth, along with all the other ingredients, make this a delectable choice. Great for a private romantic dinner or if you're having dinner guests who like seafood. Using a food processor makes the fine chopping easy. Recipe originally came from Sunset's Casserole cookbook.

    Our favorite fish tacos! The white sauce adds a delightful element to the tacos. Recipe was published in our local newspaper as the fish taco recipe from Rubios Baja Grill, San Diego, CA. When we lived there Rubios was our favorite place for a quick bite to eat.

    This is my mother-in-law's life-long recipe and they're great! Ratio is 1 to 1. Also, this is a good fundamental recipe that can be modified to suit personal preferences; such as adding diced green chiles, chicken, additional spiciness, etc. If you don't like to roll (rather messy), you can alternately layer the tortillas and mixture in a casserole dish.
