This came out rather good - I enjoyed it - But I wish I had thought to get some french bread to soak up some sauce. Oh well - I served this over cheese tortellinis and thought it was quite nice:)) Hope you think so too!!
I was tired today from a LONG week at work and was craving something easy and comforting. I was originally going to thicken the sauce with come cornstarch and serve over noodles, but the hungrier I got, the lazier I got !! This is what it ended up being and now I'm full and happy!
I was craving something Mexican the other day , but didn't have everything that I needed. It was cold and rainy out and I DID NOT feel like going to the store at all. This is what I came up with and my company told me to write it down before I forgot it!!

I LOVE this meatloaf!!! I finally found a turkey meatloaf that has great flavor and isn't dry! Love it in sandwiches too! I know it sounds strange to add stuffing and beef gravy to a turkey meatloaf, but it sure does work well for me. This came from somewhere on the web - can't remember where.
This has been in my family for ages - my grandmother used to make this during the depression. Don't let the simple ingredients turn you off--this is definitely more than it seems it should be. It seems that I crave this when I'm not quite feeling up to par. I love this with a nice slice or two of warm bread.
Almost everything I used here was on sale this week at my supermarket - Buy 1 get 2 free - and I didn't find a recipe anywhere, so I came up with this one - which is easy and good!! Not too spicey - wanted to keep it easy on the post-flu stomach - but VERY good!!
I read about 30 different recipes from 3 different sources and this is what I came up with - I liked it and so did my company!! This make a LOT of enchiladas - I used 2 (9x13)baking pans - sprayed with Pam. Enjoy!!
I came up with this last night when I was trying to figure out what to do with 1/2lb of shrimp. Turned out great and was easy!! What more do you need? I actually did this in my rice cooker, but could just as easily be done in a regular pot -
Easy, tasty, low fat - what more could you want from a meal?? Smells SO good while it's cooking too! Even people who don't like eggplant have enjoyed this. Serve with a nice green salad and garlic bread and enjoy!!
