    Skinny Scalloped Potatoes

    Definitely not an exact replica but if your cutting calories & fat this is a great recipe to curb the scalloped potatoes craving. I get them alot!! Peas could possibly make a lovely addition to this as well :) I'm not sure exactly where I originally got this from but I have adjusted the liquid ingredients so it will cover all of the potatoes. As the original didn't say what type of pan - I used a 9x13 and it was perfect. Throwing in some nutritional yeast gives it a bit of the cheesey flavor & adds some vitamins - YAY!! Enjoy!!

    (LFRV) I'm not huge on juicing because it gets rid of the fiber and changes the natural balance BUT this is amazingly delicious. This makes one serving - I personally triple the recipe to use the whole lemon & so cleaning the juicer is worth it :).     Super yummy picatta version from Isa Chandra Moskowitz's book Appetite for Reduction (love this book!). She pairs it with arugula and recommends serving over mashed potates (Caulipots anyone?) instead of with the traditional pasta. Who doesn't want another excuse to eat mashed potatoes? Also if you want more bulk try adding in some mushrooms. Enjoy!!

    Caribbean Curry Black Eyed Peas With Plantains

    A low fat & simplified version from Isa chandra Moskowitz's book Appetite for Reduction. Instead of using hard to find Jamacian curry spice blend she uses this cheater version which simply adds star anise to regular curry powder - problem solved!! She recommends serving this tasty curry over rice but I served over quinoa and it turned out great as well. We cut the plantains up into smaller pieces than she recommends but that was just personal preference.

She describes it perfectly: "Silky rice noodles, cool cucumbers, and refreshing mint are spiced up with chili garlic sauce". Serve with extra lime wedges & more chili garlic sauce.

I made these for some non vegan friends who were weary of tofu but they said these were amazing!!     These are my puppy's favorite treats!! I've been trying to come up with stuff that is raw and pure for her because I do believe she has some allergies. I wanted a treat that she enjoyed & didn't add in all the extra junk. You can use one, the other, or BOTH!!!!! The sweet potatoes are more like chews while the apples are more like treats because they don't get quite as hard. These become dense after dehydrating, then when the dog starts to chew them they become chewy, and finally after they've knawed on them for a bit they are gooey!! Dogs do not break down the fruit & vegetable cell walls but these will just pass regardless. She receives plenty of nutrition from her regular meals & I wanted a treat I wouldn't feel bad giving her a ton off....especially during the training process. This recipe makes enough for WEEKS....well I cut them smaller since I have a young one so might not last as long for a big dog. Hope your doggy enjoys!! Punk goes absolutely insane when she hears the bag rustling that the sweet potatoes are in...she LOVES THESE!!

    The DH loves this!! This dish is from thisdishisvegetarian.com. Feel free to be creative and add more or less of something - very forgiving recipe here! I think you could probably get away with using almond/soy/rice milk for a thinner sauce or blended tofu for a thicker sauce in place of the non-dairy cream...but don't take my word for it (haven't tried doing that yet) :D
