    This was from Shine on Yahoo! and I didn't want to lose the recipe! It was adapted from Baking at Home with the Culinary Institute of America, according to the website. They claim the key to the moist, chewy cookies is to use high-fat butter (such as a European variety) and refrigerate them overnight, so this is not something you'll whip up and enjoy on a rainy afternoon. :) I'll have to plan ahead.

    This was featured in the April 2012 issue of "Reader's Digest." I wanted to add it to Food.com so I wouldn't lose it! It is part of their Digest Diet feature. Here are the nutritional facts given in the article: (per 2-wedge serving): 341 calories, 17 g protein, 13 g fat (5 g saturated), 10 g fiber, 296 mg calcium, 10 mg vitamin C, 44 g carbohydrate, 603 mg sodium. As mentioned in the printed article, you can substitute cottage cheese for the ricotta if you puree it in a food processor for a minute. Also, using pre-made whole wheat crust gives you a faster and healthy option.

    This is a modified version of the Polish Apple Pancakes found here on Food.com. My kids devoured these and clamour for more - a fantastic, warm and delicious way to kick off a weekend or holiday. Hope you enjoy them as much as we do! (I substituted applesauce for the oil in the original recipe, then used the remaining applesauce as a topping on the pancakes in place of syrup.)
