    Fassuliyyeh Baidah (white Bean Soup)
    Handle

This is served with medium-grain rice. This, as most Palestinian dishes, can be made with either lamb or chicken. The chicken version is as per the lamb version except the following: Once the onion is lightly browned, add chicken and brown. Add water and follow usual directions. When the chicken is cooked, remove chicken and set aside. Before serving, sprinkle chicken with salt, baharat/curry powder and olive oil (optional) and brown under grill. Serve on top of rice with small bowls of soup.

Kofta Bi Tahini (kofta With Tahini)
    Handle

This recipe is preferably done with a meat grinder, however is possible without one as well. It can either be made to be eaten with Arabic bread (with a little sauce) or with rice (with more sauce). Serve with Arabic salad or a salad of your choice.

    An Arabic Breakfast
    Handle

This is a standard breakfast in Palestinian households. I'm just writing up what I ate for breakfast nearly every day while I was living in Jordan with my Palestinian in-laws. This is traditionally eaten on the ground, laid out on a tablecloth, with the people grouped around. All of the ingredients are optional (except for the olive oil and tea of course!). Palestinians normally just round up whatever they've got in the house at the moment -- this is the complete version! I've listed white cheese here, this is the standard cheese for Palestinians. I only know it by this name, if anybody knows another, more specific name, could you please tell me?

    Select
    Arabic Salad
    Handle

This is the standard Palestinian salad -- they eat it with just about anything but especially to accompany and give colour to rice dishes -- it might take a little getting used to, but you'll get used to it!

    Select
    Machbous Rubyan (Rice With Shrimps)
    Handle

This is a classic Gulf dish -- yum yum! I've adapted this recipe from a recipe booklet that came free with "Ship Madras Curry Powder" I made it the other day and my husband thought it was wonderful! Serve with a nice, colourful salad, otherwise it'll look a bit yellow yellow yellow! Next time I want to try putting whole king prawns on top to add a bit of colour!

    Select
    Yakni Pilau (Chicken Rice)
    Handle

This is the first dish I learnt as an adult and still it is my speciality... there's only one word to describe it... yum! When I'm cooking this for my husband and myself, I usually remove the legs whole, sprinkle them with spices and brown under grill, and then add the remaining chicken to the rice as per instructions.

    Recipe #87844

    Select
    Upside Down (Maqloobeh)
    Handle

This is a classic and probably one of the most famous Palestinian dishes. Everybody loves it! This is a standard in all Palestinian homes. It's also an innovative and different way to cook--a fun thing to cook when you're having guests over! Upside Down (translation of its Arabic name, Maqloobeh) is made in a variety of ways. It can be made with either chicken or lamb but my husband's family only makes it with chicken. Note: This recipe requires a large serving tray/plate, preferably round. The recipe is long but it's simple to make--especially after the first try. Enjoy!

    Recipe #87832

    Select
Quick 'n' Easy Fruit Cheesecake (No-Cook)
    Handle

This is a recipe for a basic, strong flavoured cheesecake that I've adapted from two recipes in the Edmonds Cookbook. (the must-have cookbook for all New Zealanders!) My husband, the 'cheesecake connoisseur' , loves this cheesecake and requests it frequently! He likes me to make the cheesecake with double the cheese, in which case you double all the cheese ingredients except for the gelatine which you should triple ... yum! Note: This recipe requires a spring-form cake tin.

    Recipe #87664

    Select
Quick Sweet Lamb Curry (Microwave or Oven)
    Handle

This western-style curry was passed on to my mother by her friend many years ago, and has now been passed on to me... one of my favourites! This is a great meal to make when time is of the essence but you still want something to eat! Serve with basmati rice and poppadoms or paratha. Also good as one of a variety of dishes at a dinner party. Note: I recommend that you use good quality lamb if cooking this in the microwave, otherwise the meat will be tough. Quantities of ingredients are flexible, I hardly ever stick to the amounts given! I also like to add peas to make the curry all the more interesting.
