    This is a WW recipe (5pts for orginal recipe) that I have adapted to also be lower in sugar/carbs to make it a good recipe for diabetics as well. I will post points once nutritional calculations are available.

    This is very good and much easier than stuffing the cheese into the chiles, but with pretty much the same flavor of the traditional method. If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. I use roasted Hatch Peppers (mild), when available (late Aug-Sept here in NoVa). Easily adaptable to a veggie main dish by leaving out the chicken. It is 9 servings but my family of 5 polished it off. Even the 1 who NEVER takes 2nds went back for a bit more!

    I made this chili for my 17 year old son when one day when he had a bad cold. I used stew beef because it was far less expensive than ground beef and it was delicious. If you don't like super spicy chili, substitute medium or mild Pace salsa for the Hot. He pronounced it "best ever" and the only chili he ever wants me to make.

    This is my version of a breakfast I had while in Ireland. The version there was made with smoked haddock (finnan haddie). I did not change the butter (can't do without!)but I did cut it in half. I also use fat-free half & half in place of the cream. This is delicious for any meal. I serve it with crusty bread and a salad to make a complete dinner.
